Spicy Thai Steamed Mussels

Ingredients
5 lbs of Confederation Cove Mussels
3 Limes
¾ can of Coconut Milk
1/3 cup of Dry White Wine
1 ½ tablespoons of Thai Red Curry Paste
1 tablespoon of Asian Fish Sauce
2 cloves of Minced Garlic
1 tablespoon of Sugar
2 cups of Fresh Cilantro
Directions
Mix coconut milk, juice from 2 limes, wine, curry paste, garlic, fish sauce, sugar and cilantro together in a large sauce pan over medium high heat. When sauce is simmering add mussels, stir, and cover with a lid for about 7 minutes or until all mussels shells are opened. Mix mussels and sauce and serve hot with a slice of lime for garnish.
